Don’t know what to make for breakfast? Sometimes the same old toast, fruit, cereal, yogurt, etc. gets so boring. When I need to mix it up in the morning, I see what different ingredients I have on hand to throw something together. Sometimes my inner vegan comes out and I find that package of tofu that I haven’t used yet. Don’t stop reading just yet…let’s try something new together (even if you are not vegan)!
If you are trying tofu for the first time, let me tell you what you are in for. Tofu is low in calories, a great source of plant protein, and packed with nutrients. The thing about tofu is that it is so versatile and can be used in many different recipes. You can also flavor it any way you prefer.
In this video, I explain how to make this simple, PROTEIN-PACKED breakfast. So, let’s get into the steps for this tofu scramble. All you need for this recipe is a medium pan, packaged tofu, avocado oil, and whatever seasonings you prefer. Let’s get cooking:
1. Heat 2 tablespoons of avocado oil in a pan over medium heat.
2. Remove tofu from the package and crumble it as you add it to the pan.
3. Sauté until the tofu is soft.
4. Add your preferred seasoning(s) to taste – I prefer dill!

You can also add so many different ingredients to your tofu scramble to add color and flavor or serve it with toast. I recommend adding the following: peppers, onions, kale, spinach, avocado, tomatoes, hot sauce, meat, or plant-based meat…the list goes on!
I think one of the best parts of cooking is trying new things and stepping out of your comfort zone. This is so important the older we get.
